A NOTE ABOUT OUR SIDES

There's a good chance we've made a change to something you've come to expect from Hugo's.

For many years, one of the things that has made Hugo's different is the extraordinary amount of choice we give our guests. Over time, that grew to more than 35 different items available as sides or substitutions, a level of choice rarely found in restaurants today. Some of that happened simply because we prefer to say yes.

There was a time when the number of customers coming through our doors made it easier to support that kind of complexity. Today, we serve fewer customers than we did a decade ago, while the cost of preparing and maintaining all those choices has continued to rise.

Every choice still must be purchased, prepped, stocked and ready every day whether five people order it or fifty. Being responsible about the future of Hugo's means recognizing that we can't continue doing everything simply because we've found a way to do it in the past. So we're making a change.

With our Fall menu update that came out today, we still offer 23 different included sides and upgraded substitutions. By restaurant standards, that remains an extraordinary amount of choice, just brought back to a level we can responsibly support.

And we understand: if the one choice that changed was your choice, being told you still have 22 others isn't much consolation.

This isn't about making Hugo's less accommodating. It's about preserving something we've always valued: giving people the freedom to eat the way they want, in a way that is sustainable for Hugo's today.

If you have thoughts about the change, or any of the other menu items on our menu, I genuinely welcome them. Our customers have helped shape Hugo's for more than 45 years, and we intend to keep listening.
